Use Swing.

SWT on Mac seems to me to lack performance. It feels like it is tuned for Windows. I have heard the Linux community make the same complaint.

IMHO SWT doesn't really serve a useful purpose.

Opinions aside, you will find more information about Swing, online or in print. Swing is more customizable, should you want or need that. SWT tends to make things that match the native look and feel a bit better than Swing, though the Swing Aqua implementation isn't particularly bad and seems to improve with each release.
