I'm new to A) Macs and B) Macs with Intel insides.  I am not, however,
new to Eclipse + Java, which gives me pause -- when my Macbook
arrives, how screwed am I?

not screwed. In case the official Eclipse downlaod for MacOS X is not a universal binary when your Intel Mac arrives, you can just download an Eclipse integration build (e.g. Eclipse 3.2M4) and replace the SWT plugin with the universal binary version of SWT that I provide as an 1.3 MB attachment to the following Eclipse bug: https://bugs.eclipse.org/bugs/show_bug.cgi?id=98889
