1. it would be nice if we don't have to export DISPLAY=:0.0 manually
2. it would be nice if SoyLatte was able to automatically able to start up X11 :-)

I do not have to do any of those on my macs with SoyLatte. Are you pre-Leopard?

I'm pre-Leopard (Tiger) and don't have to do either of those either. In my .bash_profile I have

## Provided you have it running already, make sure
## you can start X11 apps from OS X native terminals
export DISPLAY=:0.0

I think from trying to figure out how to configure gnuchess actually.

X11 appears in the Dock at startup and shows as "Open at Login". I'm not remembering what I might of done to arrange that. X11 does prompt to confirm Quit on shutdown which is a little bit of a nuisance.
