I have been using a Macbook with 2 GB ram for java development using native tools (Xcode). I also have Parallels software installed running Windows XP. They all co-exist very well - no major problems.

I don't usually do hardcore coding in VMWare. I have a Linux workstation and my Macs for that. Since you can get a quad core PC at around $1000 US it's never been cheaper to set up a really great Linux workstation.
