Have you tried replacing the stub with the latest from JavaVM.framework? It clearly is using an old stub, and there has been the odd issue brought up on the list before with old stubs breaking new Java releases. There have been an awful lot of stubs produced over the years, Apple cannot test all of them with each new release. Even if IA is providing the stub, you should be able to run a post-install action to update it. Unless your app needs an installer for some other reason than generating the app bundle, you could forego the installer altogether, build the bundle yourself with Apple's JarBundler, and distribute it in a .dmg for drag-and-drop installation.
