I failed to RTFM and didn't quit Safari before installing the update -- is there a way to recover from this mistake?

Just quit and restart your browser.

If you don't, the next time you hit Java, you won't be able to load it because the previous version of the plugin is still loaded into your browser's process, and it doesn't recognize the new Java JDKs that the update laid down. Logout and back in if you want to flush out any process that may have touched the WebKit framework.
