In your .bashrc, .tcshrc, .zshrc, etc, you would set $JAVA_HOME

JAVA_HOME=`/usr/libexec/java_home`

See the "java_home" man page for more information.

Too bad ~/.MacOSX/environment.plist doesn't allow for backtick-quoted expressions (or intelligent expansions of any kind); then we could set it once there and have it get picked up by any shell inheriting its environment from Terminal.app.
