As I've converted to the Mac only recently, my first reaction was to recommend "Secrets of the Windows Game Programming Gurus" (Andre LaMothe) -- however, this may not be exactly what you're looking for. It focuses on 2D game programming using Micro$oft's DirectDraw, DirectInput, and DirectSound APIs, but most of the information in the book is useful for any game developer -- discussions on AI, physics, collision detection, etc. Definitely a worthwhile read. Anyone know if there's a similar book for MacOS?

Another thing you may want to look at is the Crystal Space engine at http://crystal.sourceforge.net/. It's a sophisticated, open source 3d engine. I have no idea whether it'll compile on Darwin, but that's have the fun.
