case where want to get the finished output of a very complex set of draw
calls in a format I can put in a 3-d modeler.

Yes, you can do this. I wrote a hack at MacHack several years ago that always turned on wireframe mode so you could see through walls in Quake 3 for example. I never posted it anywhere as I didn't want people using it as a cheat, but it's probably been long enough that not too many people would care anymore. Are others interested in it? If you have the MacHack CD from 2003 (I think?) it's on there. It's called GLCheat and uses mach_override and mach_inject to do its nastiness. I could post it on our website if people are interested.
