I apologize if this is a FAQ.  Are there other extensions like this,
where the extension string claims it is supported despite there being
no support for it in the hardware?  Is there a list somewhere of all
such extensions and the hardware on which they are *really* supported?

Generally not; generally the presence of an extension string will indicate hardware support for the feature. ARB_imaging comes to mind as the major example.

Apple also supports the vertex programming extensions (both
ARB_vertex_program and GLSL's ARB_vertex_shader) on hardware that
can't do them in hardware, but in this case the result is usually
"fast enough" anyway, so I don't really take issue with these.
