Subclass an NSOpenGLView, add some code to draw lots of big polys (so that you're not geometry or host bound) that use your shader. Time it. Play with shader. Re-time it.

If you get no change you're not limited by the shader. Add more polys, or say "It's good enough"

I'm sure there's some apple sample code that would have the view and timer in it. OpenGL Profiler might also help you out taking measurements.
