I don't know if this is what you mean by manually, but here's how I do it:

1) I partitioned my workstation HD.

2) On one partition, I created an install "just the way I like it." That includes modifying the default user template, in
/System/Library/User Template/English.lproj, and installing all of the site-licensed apps (and the installers for the keyserved apps.)

3) Have a Firewire HD, itself with two partitions:
1 partition is my Utility Partition; minimal system install, but includes utilities like DiskWarrior. Includes Carbon Copy Cloner from www.bombich.com.

2nd partition is temporarily empty.

I cloned the new system from my workstation partition to the empty HD partition using CCC.

When I setup a new system at a user's desk, I will boot off the Firewire HD "utility partion" and use CCC to move the clone system from the FW HD to the new machine.

Takes 20-30 minutes apiece. Not too bad, unless you're doing more than three at a time. Works sweetly; at first it made me nervous, but now I use the same 10.3.3 image for all class of machines: G5, iMacs, portables. Doesn't seem to cause a problem.

If you're doing more than 3 at a sitting, it's time for you to look at using a netinstall method, which is beyond the scope of my experience. I suggest that you spend more time looking at www.bombich.com, as he has some suggestions for how to setup CCC for this kind of environment; also read http://www.macosxlabs.org/ for help.

I think it'll be pretty hard to do without using Server for the NetInstall component, though, although I imagine it could be done by command line hacking.
