In the past I have enjoyed the ease of using Disk Copy to make <2GB

How is everyone deploying OS X images? The images are much larger than
2GB (in fact, my setup with apps runs well over 4 Gig). What am I
missing? I really don't have access to a NetBoot server (yet)...but
there must be a simple solution to this simple problem...

I have had some success making restorable OSX images using OSX Disk Copy and ASR for OS9.

First make a blank DIsk Copy Image (.dmg) in OSX and save it to a local volume (firewire drive is convenient). Boot into OS9 and mount the DMG you just made. Drop the volume you wish to Image onto a copy of ASR (you need to use v2.1.2 or later) and choose to restore this onto the blank image. You can then use this .dmg file and ASR to restore this new image onto as many machines as you like. Not sure, but there may be a limit to the size of an image you can restore with ASR (I don't think mine have exceeded 4g). If that doesn't work you could try using Carbon Copy Cloner to clone the volume to the blank DMG.

Have a look at this article:

Hope this helps.
