I really like this idea. Consider that VPC with Windows costs $250 or so. How many machines do you have? How much would it cost to setup one Windows Server? Windows Terminal licenses, at least for us (we're edu) cost about $50 per machine that connects. Unless you only have a very small lab, you should definitely consider this option. (Misspelled, and the other option was defiantly. That works too.)
It's also likely in a lot of Edu establishments that you already HAVE a Windows 2000 Server with Terminal Services just disabled there and all you need to do is add Terminal Server licenses.
Max out the RAM on the server. Seriously. Max it out. It's cheap. And if you can, use a machine with dual or quad processors. The first time we used it we were using Citrix Metaframe (before it became Terminal Server) on a dual-233 PPro. I was running Windows NT 3.51 on my Powerbook 1400 over a modem link.
Also it saves a packet on disk space. VPC images are hefty these days.
