It's a two-step process:
1) Go to /etc/smb.conf and add the line
username map = /Library/Samba/users.map
In the [global] setting. If you're like most of us, you've already locked
that file in fixing the group-witeable bug; if not, you'll need to lock the
file or it will get gorked every time you use the Server Admin Windows
Services fix (see Kbase article 106570 for details).

Then, in /Library/Samba/ create a users.map file using your text editor of
choice. The format is

shortname = "Long Name"

i.e.:

dpooser = "Dave Pooser"
ctaylor = "Craig Taylor"
