Welcome to the list! You have touched on one of the much discussed topics on
this list. If you take a look at the archives, you will find many posts that
will let Apple's Mail Server (referred to as AMS on this list) appear as a
questionable product. It has certainly improved over the last 15-or-so
months, but there still are problems.

Sendmail, the standard Unix MTA is supplied with OSXS, and needs a few
tweaks to be usable. See Ari Maniatis' excellent how-to - updated just today
- at http://www.ish.com.au/show/article_sendmailOSX.html

Sendmail will let you do all you want and more, but its configuration can
reportedly get a bit problematic (Note: I am not speaking from experience
here).

If you don't feel like tinkering with config files and don't mind spending
the extra cash for it, I can whole-heartedly recommend Stalker's Communigate
Pro. It's an extremely robust SMTP, POP, IMAP, Webmail and LDAP server
package that runs on just about any platform. It's not cheap, but if you're
not familiar with sendmail (or postfix, exim, etc.), it pays for itself in
time saved rather quickly. You can be up-and-running in minutes, literally.
