I understand that retrospect can now fully restore a server volume. In

It's not that simple. You first must install the OS and recreate the filesystem with the same geometry as it was before. The OS must be the restored to the same version. You then must install Retrospect, and preform the restore over top of those filesystems. It wastes a lot of time and is a poor way of doing it.

Second, I just set up a retrospect backup to back up the entire server drive
rather than doing subvolumes - I assume this is correct but please correct
me if I'm wrong.

That would depend on your local backup policy. Personally I'd say that is a waste of backup time since yopu should be using incremental backups where possible and backing up parts of the filesystems based on frequency of their volatility.

Retrospect does incremental backups regardless of what drive/volume you configure
it to backup. Just make sure you aren't backing up the entire drive AND an individual
volume. No reason to store anything twice.

Any hints or tips on server disaster restore as it pertains to retrospect
would be appreciated

Don't have one. Or keep a bootable drive with retrospect installed on an external firewire or USB drive so you can do the restores w/o having to start from bare metal.
