If the documentation you're using is telling you to enable divert and
forwarding they are already built into the Darwin kernel, so you can skip
that step.

/etc/hostconfig is basically sourced by rc scripts and SystemStarter scripts
to configure parameters. There isn't really a list of the options because it
is user/vendor extensible. If you take a look at /etc/rc you can find where
many of the values are used.
