Apache Log Weirdness

My campaign through OS X Server and Apache, FTP, etc., is progressing well.
(Remembering that everything is relative. <g>) Apache is serving my sites;
FTP is fine, though I find permissions a bit confusing and difficult; I have
PHP, Perl and MySQL enabled and functioning, which lets me run forums and
such.

So it's time to deal with a few housekeeping chores, chief among the Apache
logs.

I've been rolling them daily just to make it easier for me to keep tabs on
things here at the beginning. I'll switch to weekly shortly.

But working with the logs is very difficult. I've not been able to get the
system to automatically delete the rotated log files after three days,
though I think I've followed the instructions in the manual correctly. And
working with the files themselves if made more difficult since they are
owned by the System, even if I choose to save them in my home folder. Doing
an "rm -i *" on the files myself is a bit of a pain.

Ideally, I want the logs to roll to a folder of my choosing with me having
read/write access to them, allowing me to deal with them at leisure. Then I
could delete them or have them disappear after three days.

Is there a primer somewhere on how to make this happen?
