You can only mirror the boot drive on X Serves, so I've been told.

You can do this. You'll have to use the command line though -- in
particular you'll do 'diskutil enableRAID' followed by 'diskutil
repairMirror':

I don't know if this will be supported on this Mac. The man page makes
a vague reference about it not working on all hardware. I take that to
mean older Macs are out of luck.
