Shame on you, upgrading your software and not waiting for Apple to do it...

I am unable to execute PHP scripts when accessing the server via SSH
(as an example: $php script.php). The command 'php' is not recognized
via SSH.

BTW... you have defined the $php variable, or is that a BASH prompt?

I'm reasonably sure that SSH isn't the problem.
The stuff is probably where 'you' put it in /usr/local/sbin,
but that is probably not in your $PATH.

1) Find out where the php executable is.
2) Add that directory to your path.

With sufficient permissions, a "Brute Force" way to do #1 is:

# find / -type f -name php -print

Aloha mai Nai`a!
