I was also perplexed by this for a while. The solution I found was to install OSXS via target disk mode with my powerbook. When running the setup you will see both of the Xserve's drives as firewire drives. Create a RAID volume with the two, then install the OS. After the OS is on, reboot and continue setup via remote Server Assistant.

I installed a mirrored SOft-Raid (2 80GB Drives) with a Monitor and than tried to Install OS X Server with Server-Assistant remote but this tool showed 2 Harddisks with 40GB each.

Does anybody know if its possible to work with a Softraid reliable?
