Unfortunately, many of the systems that access this network are "locked
down" by the unit that manages them, so the user cannot add printers on
their own. They have had these AppleTalk printers set up initially when
on the wired connection and my goal is to minimize the amount of
additional configuration to use the wireless. In addition, very few of
the printers in the building have IP addresses assigned. Most are just
AppleTalk protocol printers.

I have been looking into this, as well. There are some old Unix AppleTalk
router packages that should build on OSX (though no guarantee).

At this point I am thinking about removing the OS X server as the NAT/
DHCP box and replacing it with one of the AirportExtreme access points
running DHCP and NAT to share its Public facing IP address on its WAN
port to the other access points via the LAN ethernet port. I know that
this configuration does pass the appletalk packets.

I also want to test whether the OS X Client Share my Internet connection
feature of the Share preference Pane will pass AppleTalk packets. I
believe it will allow the zones on the public side to be seen on the
private side. Too bad that isn't a feature of the OS X Server
configuration--though since it is based on ipfw, I can see why it does
not support it.
