AppleTalk was routable the last time I checked, and has been for many years. That said, IP printing is the future, and it's a good, forward-thinking way to go, as long as one's hardware supports it. If a site is still using non-IP-ready printers, and if those printers can't be captured and served by a print server, then routing AppleTalk across subnets might be a good stop-gap until said printers can be replaced.
