However, you may use the LDAPv3 Plug-in and statically map the AppleMail attribute, so that every user gets the same value. Due to UniqueID mismatches, you should not use such a server for any other services (the AD Plug in and LDAPv3 plug in can not supply the same UniqueID under /most/ circumstances). This does not require schema extension.

Also note that if this is the case you should either a) kerberize Mac OS X Mail Services (http://www.4am-media.com/sso) or use SSL to communicate with AD. Otherwise passwords will get passed in the clear.

If the Active Directory Plug-in supported the same static mapping that the LDAPv3 plug-in did. this would not be an issue.
