YES, but realize that the iPod's battery and drive are not designed for continuous use. YES you can use whatever OS you like. MAYBE, if you erase the iPod as part of the install, but why would you do that.

As usual, Dan is correct. The admins at the Virginia Tech super computer use an iPod at times for booting a cluster server. For that it's probably fine. But using the iPod as a startup disk for extended periods of time it not recommended. I keep a system on my iPod for debugging purposes, but never let it run for long.
