processor seems to be averaging between 2 and 2.5 on a single
processor. I am leaning towards a single processor model but wanted
some opinions on the benefits of a dual processor.

The dual will be more responsive, and in general will be faster. The question is, do you need the extra speed. I tend to think duals are always a good idea in servers, if you can afford it.


2.  The stock single processor unit comes with a single drive bay
filled. Obviously I want to add at least one more drive so that I can
setup a mirrored RAID for data security. Two subparts to this
question:

2.1 Can the XServe G5 support RAID 5?

Yes, with the available PCI hardware RAID card (a $500 option that takes one of the PCI slots).


2.2  Can additional drives be added to the RAID without having to wipe
the existing drives and reinstall everything?

Not for RAID 5. For RAID 1, yes (RAID 1 doesn't require the HW RAID card, FYI).


One other note -- the Xserve G5 does not ship with video by default. If you're more comfortable with a monitor, you'll want to add the $99 video card.
