Hi, From one of the tech notes in Apple Support, here is the info you need,

TCP 1723 		PPTP 			Mac OS X Server   VPN service
UDP 500			ISAKMP/IKE		Mac OS X Server   VPN service
UDP 1701		L2TP			Mac OS X Server    VPN service
UDP	4500		IKE NAT Traversal	Mac OS X Server    VPN  service

For Mac OS X Server 10.3 VPN service: PPTP uses the IP-GRE protocol (IPprotocol 47).
L2TP/IPsec uses the IP-ESP protocol (IP protocol 50, ESP).
