In the WGM it seems impossible to create a sharepoint in /var/*. I have the existing users and the site in the WGM.

Is their an easy way to do this? I read the manual and it's quite basic and does not really help at all. Can anyone point me in the right direction on this?

You could probably just turn on the inspector in WGM and change the home that way. Or use dscl.
