passwd in SU mode?

How may I change a passwd (user, admin or root) in single-user mode?

On a search on http://search.info.apple.com/
with the words: password single-user
I got a reference to document 106156
with the following quotation:
"password can also be reset by starting in single-user mode."

Which is true on any Unix.
But...
the quoted sentence doesn't appear anywhere within document 106156
and passwd doesn't work in SU mode.
