My biased recommendation is a set of XServe internal disks Mirrored, with 
SoftRAID, and 2 or more disks as part of the mirrored volume rotated off 
site, which are brought in, plugged in, and removed at night. This gives 
you a set of copies off line, which can also serve as archives. If your 
swap drives are ATA, you need a couple spare trays for the XServe, If 
they are FireWire, they are easier to move around, and to connect to a 
alternative machine in an emergency, but FireWire (because it uses a 
seperate cable/enclosure) is not as robust as ATA in a server tray.

The cost of the above is reasonable, 2+ disks, and SoftRAID, and seeems 
to cover your needs.
