I've been reading the man pages on diff and I understand that version control can be achieved but I've not been able to find any working examples to learn from and the man pages don't give any examples.

I don't have an examples handy, but if you do 'info diff' (from the command line, of course!), there is quite a bit of information in there on using diff for this purpose.
