If your Open Directory Servers are running 10.3.9 with the updated LDAP schema, you can simply use the 10.4 Server version of Workgroup Manager to edit the appropriate Address Book fields of your existing Open Directory users such that their attributes will be retrieved by Address Book.

I'm planning on putting together a decent web interface for my admin staff to be able to update address book details for my users, which will be rather simple to do, and I'll post that up somewhere when it's done.

Note that Address Book still doesn't retrieve all the appropriate fields for users, most of them, but not all the fields that you can enter into Workgroup Manager.
