I find the default apache log rolling system to be rather frustrating, as restarting apache causes the log roll time to get reset.

I spent a while messing around in similar ways to what you're doing before I found cronolog.

It compiles cleanly under OS X, and is quite excellent. You can just set your log location to pipe through cronolog instead, and then it will take care of rolling your logs at specific times, rather than at a certain age.
