I've not done this myself, but the sendmail resources on the web might get you a response more quickly.
Just curious, but was is there a compelling reason to throw out the postfix/cyrus that Apple provides? Thier cyrus is a bit special with SASL and all. Maybe try building the Apple source? Although that, reportedly, is a pain to do.
