or is there a way to change my settings in Server Admin to accommodate
two SSL certs?

No.

But you can duplicate a network port in your System Prefs and give it a different IP address.

How many times can one do this? Will I meet a perfomance hit once I run say 50 or more IP-addresses on the same network port? 
(I'm figuring out how I should be running many small sites here, for which I want to provide some secure services)
