Do check for nmbd getting a SIGTERM at the same time everyday on your nmbd.log.

Anyways if you think you have the same issue discussed on those threads the only solution that was found there was creating a script that killed nmbd and smbd, and then started samba, and running it every hour via launchd or cron. Yes, every hour.
We now have a school working with one Xserve and there are about 120 Windows XP clients, plus 77 iBooks.
