map to something below a share



First of all, thanks to everyones ideas for my mass file conversion - got it done yesterday thanks to the list.
 
New problem: We have users that are finicky....are you surprised yet? We're taking on a whole additional department onto our network, so they have to get used to the shares, etc. We have a directory structure like Projects -> project1 folder, project2 folder,  where project1 and project2 are below Projects. There are also subfolders within the individual project1 and project2 folders.
 
IS it possible for when a share is mapped, that it goes right to one of the subfolder that is NOT shared? The root is shared, (Projects), but depending on the user, we would like it to drill down to their project folder, and not have to create a share for each subproject folder to do this (for security reasons as well).
 
Currently, I'm mounting SMB shares to the Dock using Workgroup Manager from our OS X server - in the Dock preferences applet.  If I try to map a share directly to its a subfolder, the icon on the dock just defaults to the actual share point. Is this making sense? Is this even possible what im asking? If i need to switch to a manual login script, what is the best way to centrally deploy this through Workgroup Manager - or the AD plugin.
