Has anyone on this list experience hangs after soft restarts under
Tiger Server on a Dual G5 Xserve?

Describe what you mean by a "soft restart"?

Under OS X the system is either restarted or shutdown. A restart is a reload of the kernel and OS. A shutdown powers off the system, which causes a POST, new device tree to be built by OF, and the kernel and OS loaded.

Regardless of how I do it (i.e
command line, GUI, ARD) from time to time the Xserves will hang,
forcing me to get my lazy ass out of the chair, walk 80 feet over
to the machine room, and cycle the power.

Yes, we have this exact behavior. I walk over and hard restart it.

Yes, we have the exact same behavior on a single proc xServe G4. 10.4.3 (as well as prior versions of Tiger server).

Then suspect some configuration or issue with software and applications installed.

It happens on virtually all soft restarts. Disc activity, then a sudden stop
of all processor and disc activity. This happens before the verbose startup
data appears

Impossible. The verbose startup displays everything from when the kernel is loaded and beyond.

 - as if it's some sort of boot problem. Holding the power key
to force a restart always fixes it.

Annoying. I don't know where to look for a fix (other than to avoid remote
rebooting at all costs).

Your log files are always the place to look. --
