As a result I now have iLife '05 running quite happily on OS X server 10.3.7.

Just the caveat here on why they disabled this in the first place.

Various parts of iLife suck all the CPU cycles that are available.
For instance, sucking video off of a camera, playing newly generated
music, etc.. They use the CPU so intensively that it doesn't have
any time to devote to other work LIKE RUNNING NETWORK SERVICES.

So if you do any of these the server may appear to stop working for
some time -- many minutes at a time for some operations. This will
cause some client computers to conclude that the server has crashed.
So you'll start getting reports that your web site is down, or that
your file server has detached from the network, or that nobody can
log in.

That's why Apple are so cagey about installing such software on a
server.
