Hugh,
Sounds like a clean install may be your quickest solution. You can dump the
mysql databases that contain all your mysql users and your data using the
mysqldump utility. It is very easy to use and I would look at the mysql
documentation on how to dump / restore a mysql database:
http://dev.mysql.com/doc/
What other configuration info are you going to loose? If you do not have too
many users in the netinfo db then it will probably be easier just to
recreate them. You can backup all your apache, and other service config
files using the root account. One thing you may want to do is boot the
server in firewire mode and then rsync the whole drive to a backup location.
Then you can simply grab config files as needed to restore them.
