With Parallels? BootCamp?

Intel-based Xserve as replacement for "brand-X" Intel rackmount servers.

Parallels Desktop -- note the "Desktop" in the product name -- is for running a workstation. It requires, among other things, a GUI session.

Does Windows Server 2003 support EFI? I think the only version that does is the one for Itanium. If the one for the Xserve CPUs doesn't, then running it under Boot Camp is a hack, albeit a pretty fancy one. Sounds like a great recipe for stability.
