The standard S/MIME certificates work with Outlook as well. Have your client go to https://www.thawte.com/cgi/personal/contents.exe and get a free personal e-mail certificate. Once they have gotten the certificate and installed it according to Thawte's instructions, they can then send you a signed e-mail from Apple Mail or Outlook. This signed e-mail gives you a copy of their certificate, which you can then use to send them an encrypted e- mail containing their new password -- and the message contents will be encrypted in transit so that the new password cannot be snooped.
