Newer hardware is not so clever as to know about older OS software. It's not
a matter of "conflict," it's a matter of the stock 10.4.0 Server missing
support for your newer (than the DVD/CDs) hardware. It's not "crashing" in
so much as it's "hanging": getting to a point where it cannot proceed (for
the reason just explained).
Out of curiosity, did you order the Server OS via the G5 (tower) bundle
option (looking at G5s at store.apple.com) - meaning the "Mac OS X Server
software kit " or: bought OS X Server at the same time but entirely separate
- ie: buy the G5, go back and add a 10.4 Server software box to your
shopping cart ?
