I've tried switching the clients to different servers that also run software update, but they all seem to fail eventually. Are there any other log files for the software update server that provide a little more insight into why they fail or does anyone have a solution to this?

If your SU service can't connect to Apple to check for updates it shuts off. Internet outages for short periods of time will often cause the same thing for me. A lot of times when several large updates are released it also happens (probably due to a timeout from heavy load on Apple's servers). Would be real nice if there was a checkbox to disable the auto-shutoff. Apple apparently thinks it's better for users to receive a error message saying the update server is down rather then letting clients access our current mostly up to date mirrors.
