are you asking from a hardware or software prespective

software,
linux if free, as is *bsd, so if there is no compelling reason for you to run mac os, why pay ?


hardware,
apple hardware is good, but you pay the price,

i would use apple hardware and run bsd.

my $0.02

if you want pretty gui to manage email accounts look at zimbra,
for a decent gui to manage all your www/ftp/smtp/ etc.... services, webmin will do just fine.
