I don't think Apple has opened that to manipulation. I don't recall ever seeing anything 3rd party in there. You might have to create your own PrefPane to start the service. However, you can add entries to the firewall portion of Sharing by modifying /Library/Preferences/com.apple.sharing.firewall.plist.
