I'm not sure there is a way to discover this from an LDAP client. As far as I know, there's no way to tell the difference between an attribute that has not been populated with a value versus an attribute that is not defined at all for a given object class (e.g. users). You'll probably need to ask the LDAP administrator. inetOrgPerson is pretty common, and is certainly not mac specific, so hopefully you won't have too much trouble getting access to attributes defined therein.
