CommuniGate Pro will definitely scale to this load without any problems, even on a single-server unit but with 300+ IMAP users your disk performance is going to be critical. Its software management interface and their business focus leaves something to be desired (For example, they promised Entourage shared calendaring nearly 5 years ago and then renegged) but it remains probably the most robust mail platform on the Mac.

The OS X Server mail server cluster assumes an XSAN 2.0 backend, which remains both unreleased and untested - I would suggest not banking on this in the short term as an option! Apple themselves don't mention it in any of the marketing, and it's only mentioned briefly in the server documentation pending the release of XSAN 2.
