Has anyone run into a problem with rebuilding a software RAID mirror in 10.5? I tried to do this using disk utility, but I get a message that says "unrecognized file system" when attempting to add a new disk to the RAID.

No, it wasn't. It was created using the method of creating a mirror with one part missing, in order to mirror a server boot drive. (More or less what is detailed here: http://www.afp548.com/article.php?story=20040827122302975)
I've done this before (in Tiger) and not had a problem.
